Job Summary

The Kitchen Steward is responsible for cleaning dishes in a foodservice environment to ensure that there is always

plenty of clean tableware at hand. When washing, prioritize different types and sizes of crockery and kitchen

utensils. The position is in charge of loading the dishwasher and placing dishes on drying racks to be put away

properly when done using.

Duties-Responsibilities

▪ Wash dishes, glassware, utensils, and cookware by hand or in dishwashers. Scrape identifiers off dishes.

▪ Sort and rinse dirty dishes, glass, tableware and other cooking utensils and place them in racks to send

through dish machine

▪ Sort and stack clean dishes. Carries clean dishes to cook’s line and other proper storage areas

▪ Rewashes soiled dishes before delivering

▪ Set-up or break down dish stations, including dishwashing machines and sinks

▪ Maintain dishwashing machines, including using cleaning agents properly, changing dishwater in dish

machine, and maintaining the correct water temperature

▪ Wash pots, pans and trays by hand

▪ Remove trash and garbage to dumpster

▪ Clean and roll/unroll mats. Fill/empty soak tubs with cleaning/sanitizing solutions

▪ Sweep/mop floors

▪ Assemble/disassemble dish machine

▪ General venue and restroom floor cleaning as directed

▪ Wipe up any spills to ensure kitchen floors remain dry

▪ Notify Management anytime dish machine wash or rinse cycle falls below safety standard

Work Experience & Knowledge-Education Background

▪ 6 months experience in a similar, high-volume restaurant environment

▪ Experienced with interior of hotels in restaurant and kitchen areas, with exposure to humidity, steam and

extreme temperatures

License-Certificates :

▪ SNHD Food Handlers Card

▪ Current, legal and unrestricted ability to work in The United States

▪ Lift and carry racks or stacks of dishes, glassware and other utensils, weighing from 30 lbs. to 50 lbs

▪ Frequent bending, stooping, reaching, pushing and lifting

▪ Hazards include, but are not limited to, cuts from broken glass and metal cans, burns, slipping and

tripping

▪ Knowledge or ability to learn health and safety procedures

▪ Knowledge or ability to learn of sanitation practices
